Tea leaf: THe Taste of The elements before processing

Tea Polyphenols (20%~35%)

· Function: Provides the structure and astringency of the tea.

· Flavor Impact: Astringency & Body. Higher percentages create a stronger, more drying mouthfeel.

Tea Tasting Events

Protein (20%~30%)

· Function: Partially breaks down during brewing, contributing to the texture of the tea.

· Flavor Impact: Thickness & Mellow Mouthfeel. A key factor in creating a smooth, full-bodied tea liquor.

Carbohydrates (20%~25%)

· Function: Includes soluble sugars, pectin, and polysaccharides.

· Flavor Impact: Sweetness & Smoothness. The direct source of sweetness and the foundation for the "mellowing" of aged teas.

Inorganic Compounds (3.5%~7%)

· Function: Essential minerals like potassium, magnesium, and phosphorus.

· Flavor Impact: Mineral Taste (Terroir). The source of the crisp, "mountain air" character found in high-mountain teas.

Alkaloids (Caffeine, etc.) (2%~5%)

· Function: The tea plant's natural defense mechanism.

· Flavor Impact: Bitterness & Energy. The primary driver of bitterness, combining with polyphenols to create a brisk, refreshing astringency.

Amino Acids (1%~4%)

· Function: Primarily L-theanine, the source of umami.

· Flavor Impact: Umami, Sweetness & Freshness. High levels of amino acids are why high-mountain and early-spring teas taste so sweet, savory, and non-bitter.

Pectin (4%)

· Function: A natural gelling agent.

· Flavor Impact: Silky Mouthfeel & Fruity Notes. Gives the tea a smooth, almost jelly-like texture.

Organic Acids (3%)

· Function: Includes malic acid, citric acid, etc.

· Flavor Impact: Tartness, Fruity Notes & Complexity. Responsible for the subtle fruity acidity found in fermented teas (like black tea and Pu'er)

Vitamins (0.6%~1%)

· Function: Includes Vitamin C and B-complex vitamins.

· Flavor Impact: Nutritional Value & Freshness. Minimal impact on taste, but adds health benefits.

Pigments (1%)

· Function: Chlorophyll (green tea), Theaflavins & Thearubigins (black tea, Pu'er).

· Flavor Impact: Visual Appearance. The color of the tea liquor shapes your brain's expectation of the flavor (green feels fresh, red feels mellow).

Aroma (0.02%)

· Function: Volatile aromatic compounds.

· Flavor Impact: Aroma. Extremely tiny in percentage, but incredibly powerful—it determines whether the tea smells like orchids, honey peach, or pine smoke.
