金針白玉盞,春蔬賀新元! turnip cake to Celebrate the New Year

新春蘿卜糕製作配方 / Recipe for Turnip Cake "Lo Bak Go"

1. 準備食材

食材:白蘿卜750g(約中型蘿卜一條; 開水400g; 泡好的花菇60g; 鬍蘿卜80g; 金針菇半包;薑米少量。

調味料:油20g;鹽6g;古法紅糖18g;昆佈粉;白鬍椒粉適量。

3.準備粉漿料

粉漿料:水300g;粘米粉150g;澄麵50g;粟粉50g;麻油20g 。

粉漿製作:粘米粉、澄麵混合後,水分兩次平均加入;水拌好後放入麻油。

鬍蘿卜切0.5cm小粒;薑米切小碎粒;花菇切小丁;白蘿卜750g一半切幼絲

一半切粗條,粗條約筷子大小。

金針菇切2cm小段,鍋中加入鬍麻油將金針菇炸至金黃色。

鍋中加入油,先將薑米炒香,再加入花菇炒香,再加入鬍蘿卜炒香,後加入白蘿卜。白蘿卜釋出香味後加入400g開水,加入步驟2的調味料,最後加入步驟5的炸金針菇,待蘿卜燒至透明。

將燒熱的步驟6成品加入步驟3的粉漿內,攪拌均勻等候凝結。如不夠凝結,可以回鍋再烹煮一會。

將步驟7成品放入模具,中大火約45分鐘左右。

將蒸好的蘿卜糕,冷藏一晚第二日再煎。

蘿蔔糕在春節期間不僅是一道美味,更是吉祥話的載體,每一層含義都緊密圍繞著廣東人對新年的期盼。

「糕」與「高」同音,寄寓生活步步登高;蘿蔔俗稱菜頭,象徵新年好彩頭。願這方寸白玉,載著春意與祈願,為您開啟一年吉順。
